does anyone know if is there a site out there where you can
track what Portugal, Greece, Ireland, Spain, etc debt is
doing vs the Euro (or German Bund)?
Try Markit dot com…you can try
tracking just about any credit default swaps including sovereign
credits.
Use the 5yr CDS “any
shorter duration will not be liquid enough” on GER as a benchmark
and compare it against the rest on your list. GER 5yr should
trade a lot tighter versus the other sovereign mentioned.

I believe you can access them through Bloomberg, but you might need a bloomberg terminal to do it
